This honey lime chicken and avocado rice stack is fresh, zesty, and packed with juicy chicken and creamy avocado flavor.
2 boneless, skinless chicken breasts
2 tablespoons olive oil
Zest and juice of 2 limes
2 tablespoons honey
2 cloves garlic, minced
1/2 teaspoon ground cumin
Salt and black pepper, to taste
2 cups cooked white or jasmine rice
2 ripe avocados, diced
1 tablespoon fresh cilantro, chopped
1/2 cup cherry tomatoes, finely chopped (optional)
Step 1: Prepare the Marinade
In a bowl, whisk together olive oil, lime zest, lime juice, honey, garlic, cumin, salt, and black pepper.
Step 2: Marinate the Chicken
Coat the chicken breasts evenly with the marinade.
Let the chicken marinate for at least 20 minutes for the best flavor.
