Ingredients

Glaze Ingredients

  • 1 garlic clove, peeled, smashed
  • 1 sprig rosemary
  • 3 tbsp. good-quality honey
  • 2 tbsp. plus 2 tsp. fresh orange juice
  • 2 tbsp. extra-virgin olive oil
  • 2 tbsp. unsalted butter
  • 1/2 tsp. kosher salt, plus more for finishing
  • 1/2 tsp. freshly ground black pepper

Main Ingredient

  • 1 to 1 1/2 lb. carrots, peeled, halved lengthwise if thick, cut crosswise into 3” pieces

Garnish

  • Finely chopped fresh parsley, for serving

Instructions

  1. Prepare the Glaze: Arrange a rack in the upper third of the oven and preheat it to 425ºF. In a large skillet over medium-low heat, combine the garlic, rosemary, honey, orange juice, olive oil, butter, salt, and pepper. Cook, stirring occasionally until the butter is melted and the sauce has thickened slightly, about 5 minutes. Remove from heat and discard the garlic and rosemary.
  2. Coat the Carrots: Add the prepared carrots to the glaze in the skillet and toss well to coat every piece evenly with the flavorful mixture.
  3. Roast the Carrots: Transfer the coated carrots to a parchment-lined baking sheet, spreading them out in a single layer to ensure even roasting. Roast in the preheated oven, tossing once halfway through cooking, until the carrots are fork-tender and caramelized, about 20 to 23 minutes.
  4. Finish and Serve: Remove the baking sheet from the oven and transfer it to a wire rack to cool for 2 to 3 minutes. Sprinkle the carrots with freshly chopped parsley and a little extra salt to taste before serving.

Notes

  • For a citrusy twist, try using lemon juice instead of orange juice in the glaze.
  • Use baby carrots for a quicker roasting time and a sweeter flavor.
  • Adjust roasting time depending on the thickness of the carrot pieces to avoid overcooking or undercooking.
  • Make sure to toss the carrots halfway through roasting to ensure even caramelization.
  • This dish pairs wonderfully with roasted chicken, pork, or grilled fish.
