Ingredients

Dry Ingredients

  • 1 Tbsp baking powder

Butter and Honey Mixture

  • 5 Tbsp cold unsalted butter
  • 2 Tbsp honey

Liquid

  • 1 cup cold buttermilk

Kneading

  • 3 Tbsp salted butter (melted)
  • 2 Tbsp honey

Instructions

  1. Preheat and prepare baking sheet: Preheat your oven to 425°F (220°C) and lightly grease a large baking sheet to prevent sticking.
  2. Mix dry ingredients: In the bowl of an electric mixer, combine the all-purpose flour, baking powder, baking soda, and salt. Mix on low speed to evenly distribute all the dry ingredients.
  3. Incorporate cold butter: Chop the cold unsalted butter into small pieces and add it to the flour mixture. Mix on low speed until the batter looks like coarse crumbs, ensuring small pea-sized butter bits remain.
  4. Add honey: Pour 2 tablespoons of honey into the mixture and mix briefly for a few seconds to blend the sweetness throughout the dry mix.
  5. Mix in buttermilk: Pour the cold buttermilk into the center of the mixture and mix just until combined. The dough should be slightly sticky; avoid overmixing to keep biscuits tender.
  6. Knead the dough: Transfer the dough onto a lightly floured surface. Sprinkle a little flour on top, then knead gently about 5-6 times to bring the dough together. Pat it into a ½-inch-thick circle.
  7. Cut out biscuits: Using a cookie cutter approximately 2 to 2½ inches in diameter, cut out biscuits from the dough. Gather the scraps carefully with minimal kneading and repeat shaping and cutting until all dough is used.
  8. Arrange biscuits on baking sheet: Place the cut biscuits on the prepared baking sheet, leaving around an inch of space between each to allow for expansion.
  9. Prepare glaze and brush: In a small bowl, mix the melted salted butter with 2 tablespoons honey. Use a pastry brush to evenly coat the tops of each biscuit with this honey butter mixture before baking.
  10. Bake biscuits: Bake the biscuits in the preheated oven for 10-13 minutes, or until they have risen nicely and turned golden brown on top.
  11. Final glaze: As soon as the biscuits come out of the oven, brush them immediately with more of the honey butter mixture to enhance the shine and sweetness.
