Ingredients

  • 1½ cups all-purpose flour
  • ½ cup granulated sugar
  • 2 tsp baking powder
  • ¼ tsp salt
  • ¼ tsp ground nutmeg (optional)
  • ½ cup milk (dairy or non-dairy)
  • 2 large eggs
  • ¼ cup melted butter or neutral oil
  • 1 tsp vanilla extract
  • Maple Glaze:
  • 1 cup powdered sugar
  • 2 tbsp pure maple syrup
  • 12 tbsp milk or cream
  • Pinch of salt

Instructions

  1. Preheat oven to 350 °F (175 °C). Line an 8×8 or 9×9-inch baking pan with parchment paper and lightly grease.
  2. In a bowl, whisk together flour, sugar, baking powder, salt, and nutmeg (if using).
  3. In another bowl, whisk eggs with milk, melted butter or oil, and vanilla extract until smooth.
  4. Add wet ingredients to the dry mixture and stir just until combined.
  5. Spread batter evenly in prepared pan.
  6. Bake for 20–25 minutes, or until a toothpick inserted in the center comes out clean.
  7. While baking, whisk together glaze ingredients until smooth and thick but pourable.
  8. Cool bars in the pan for 10 minutes, then spread glaze evenly over the top.
  9. Let glaze set for 10–15 minutes, then slice into squares and serve.

  • Add blueberries to the batter for a fruity twist.
