Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup milk or buttermilk
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 cup sour cream or Greek yogurt
  • 1/2 cup heavy whipping cream
  • 1 tablespoon unflavored gelatin (optional)
  • 1/2 cup fruit jam or preserves (e.g., strawberry or raspberry)
  • 1/2 cup heavy cream glaze or ganache

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9″ round or 9×13″ cake pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, cream butter and sugar until pale and fluffy.
  4. Beat in eggs one at a time, then add vanilla extract.
  5. Alternate adding dry ingredients and milk/buttermilk to the wet mixture until just combined.
  6. Pour batter into prepared pan and bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool cake completely, then slice horizontally into two layers.
  8. For the filling, beat cream cheese with powdered sugar, vanilla, and sour cream or Greek yogurt until smooth. Fold in whipped heavy cream. Add softened gelatin if using for stability.
  9. Spread cream cheese filling on the bottom cake layer. Add jam or preserves on top of the filling.
  10. Gently place the top cake layer over the filling.
  11. Pour heavy cream glaze or ganache over the top, allowing it to drip down the sides.
  12. Chill the cake for at least 1 hour before slicing and serving.

Notes

  • Swap jam for lemon curd or berry compote for different flavor profiles.
  • Add cocoa to the batter for a chocolate version.
  • Incorporate lemon zest into the filling for a citrus note.
  • Layer fresh sliced fruit for added texture and flavor.
  • Store in the fridge up to 4 days. Bring slices to room temp before serving.
