Ingredients

Meat and Seasonings

  • 2 pounds ground beef
  • 1 teaspoon kosher salt (divided)
  • ½ teaspoon black pepper (divided)

Potatoes

  • 34 medium russet potatoes, peeled and sliced 1/4 inch thick

Dairy and Soup Mixture

  • 10.5 ounce can condensed cheddar cheese soup
  • ¼ cup sour cream
  • ½ cup whole milk
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder

Cheeses

  • 2 cups shredded cheddar cheese
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 375°F (190°C). Lightly grease or spray a 9×13-inch casserole dish and set it aside to prepare for layering.
  2. Cook Ground Beef: In a large skillet over medium heat, brown the ground beef. Season it with half of the salt and pepper as it cooks. Cook until fully browned and no longer pink, then drain excess grease and set the beef aside.
  3. Mix Cheese Soup Sauce: In a mixing bowl, combine the condensed cheddar cheese soup, sour cream, whole milk, garlic powder, onion powder, and the remaining salt and pepper. Stir until the mixture is smooth and well combined.
  4. Layer Potatoes: Arrange half of the sliced potatoes in an even layer on the bottom of the prepared casserole dish, creating a base layer.
  5. Add Beef and Sauce Layer: Spread half of the cooked ground beef evenly over the potatoes. Pour half of the cheese soup mixture over the beef, spreading gently. Sprinkle half of the shredded cheddar and mozzarella cheese evenly on top.
  6. Repeat Layers: Repeat the layering with the remaining potatoes, ground beef, cheese soup mixture, and the rest of the shredded cheeses, creating a second complete layer.
  7. Bake Covered: Cover the casserole dish tightly with aluminum foil. Bake in the preheated oven for 1 hour to allow the potatoes to cook through and flavors to meld.
  8. Bake Uncovered for Browning: Remove the foil and bake for an additional 10 minutes until the potatoes are tender and the cheese on top is bubbly and golden brown.
  9. Rest and Serve: Let the casserole rest for 5-10 minutes after baking to set. Serve warm and enjoy this delicious hearty meal.

Notes

  • Make sure to slice the potatoes uniformly to ensure even cooking.
  • Drain excess grease from ground beef to prevent a greasy casserole.
  • Sour cream adds creaminess but can be substituted with Greek yogurt if preferred.
  • You can use low-fat or reduced sodium cheese soup and cheeses for a lighter version.
  • Covering with foil during initial baking helps potatoes cook fully without drying out.
  • Allowing the casserole to rest before serving helps it set and makes slicing easier.
