Ingredients

For the Marinade

  • 1/4 cup red wine vinegar
  • 1/4 cup reduced-sodium soy sauce
  • 1/4 cup olive oil
  • 1 1/2 teaspoons dried parsley flakes
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper

For the Chicken

  • 5 skinless, boneless chicken breasts, thinly sliced

Instructions

  1. Make the Marinade: In a medium bowl, whisk together the red wine vinegar, reduced-sodium soy sauce, olive oil, dried parsley, dried basil, dried oregano, garlic powder, and black pepper until well combined.
  2. Marinate the Chicken: Pour the prepared marinade into a large resealable plastic bag. Add the chicken breasts, seal the bag, and turn to coat the chicken evenly. Squeeze out excess air and place the bag in the refrigerator to marinate for at least 2 hours, or up to 4 hours for maximum flavor.
  3. Preheat the Grill: Preheat your grill to medium-low heat. Lightly oil the grill grate to prevent sticking.
  4. Prepare the Chicken: Remove the chicken from the marinade, allowing any excess marinade to drip off (discard the leftover marinade).
  5. Grill the Chicken: Place the marinated chicken breasts on the preheated grill. Cook for 4 to 5 minutes per side, or until the chicken is no longer pink in the center and an instant-read thermometer inserted into the thickest part reads at least 165°F (74°C).
  6. Serve: Remove the chicken from the grill and let rest for a couple of minutes before serving. Enjoy!

Notes

  • For best results, do not marinate the chicken for more than 4 hours to prevent it from becoming too tangy.
  • This marinade works well with chicken thighs or drumsticks as well.
  • Pair this grilled chicken with your favorite side salads or vegetables for a complete meal.
  • The actual amount of marinade consumed will be less than the total made, as marinade is discarded after use.
