Ingredients

  • 1 cup long grain white rice (or basmati)
  • 2 tbsp olive oil
  • 2 cloves garlic (minced)
  • 1 small onion (finely chopped)
  • 2 cups chicken or vegetable broth
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • Salt and pepper to taste
  • Fresh parsley or dill (for garnish)

Instructions

  1. Rinse the rice thoroughly under cold water until the water runs clear to prevent it from getting sticky.
  2. Heat olive oil in a saucepan over medium heat. Add chopped onion and garlic, and sauté until soft and fragrant.
  3. Stir in the rice and cook for 1–2 minutes to lightly toast the rice.
  4. Add the broth, lemon juice, lemon zest, salt, and pepper. Bring to a boil.
  5. Reduce heat to low, cover, and let the rice simmer for 18–20 minutes until the liquid is absorbed.
  6. Remove from heat and let it sit, covered, for 5 minutes to steam.
  7. Fluff the rice with a fork and stir in fresh chopped parsley or dill before serving.
