Ingredients

Chicken Wings Marinade

  • 2 pounds chicken wings (drumettes and wings separated)
  • 2 tablespoons fish sauce (or 1 teaspoon salt)
  • 2 big cloves of garlic (crushed)
  • ⅛ teaspoon ground pepper

Coating

  • ¼ cup cornstarch
  • ½ cup flour
  • 1 teaspoon baking powder

Garlic Parmesan Coating

  • 2 big cloves of garlic (crushed finely)
  • 12 tablespoons fresh parsley (chopped finely)
  • 3 tablespoons olive oil (or melted butter)
  • 34 tablespoons Parmesan cheese (grated)
  • Oil (for frying, if frying method chosen)

Instructions

  1. Marinate the Wings: In a bowl, combine chicken wings, fish sauce or salt, crushed garlic, and ground pepper. Mix well to coat all pieces. Cover with plastic wrap and let it marinate for at least 30 minutes or up to overnight in the refrigerator for deeper flavor.
  2. Prepare the Coating: On a plate, combine cornstarch, flour, and baking powder. This mixture will give the wings a crispy texture when cooked.
  3. Dredge the Wings: Take each marinated wing and dredge it in the flour mixture, shaking off any excess to avoid clumping when cooking.
  4. Cook the Wings (Frying Option): Heat enough oil in a wok or deep pan to submerge the wings. Do not overcrowd the pan. Fry the wings until golden brown on one side, then flip and fry the other side until evenly colored and fully cooked. Transfer wings to a paper towel-lined tray to drain excess oil, then place them while warm into a large mixing bowl.
  5. Cook the Wings (Baking Option): Preheat oven and line a pan with foil for easy cleanup. Place a grill rack on the pan and arrange wings in a single layer on the rack. Bake for 20 minutes, then flip and bake an additional 15 minutes or until wings are browned and crispy. Remove from oven and place warm wings into a large bowl.
  6. Prepare Garlic Parmesan Coating: In a small bowl, combine olive oil or melted butter, finely crushed garlic, and finely chopped fresh parsley.
  7. Coat the Wings: Pour the garlic-parsley mixture over the warm cooked wings. Toss thoroughly to ensure each wing is evenly coated with the garlic oil mix.
  8. Add Parmesan and Serve: Sprinkle grated Parmesan cheese over the coated wings and give a gentle toss. Serve immediately while warm. These wings pair well with dips such as Caesar dressing, blue cheese dip, or ranch dressing.

Notes

  • Marinating overnight enhances the flavor of the wings.
  • Both frying and baking options produce crispy wings; choose based on preference or dietary needs.
  • Adjust the amount of Parmesan cheese to taste for a stronger or milder cheesy flavor.
  • Fresh parsley adds color and freshness; you may substitute with dried parsley if fresh is unavailable.
  • Use a thermometer when frying to maintain oil temperature for optimal crispiness (around 350°F or 175°C).
  • Serve wings immediately for best texture and flavor.
