Crispy and flavorful Garlic Parmesan Roasted Sweet Potatoes: The Ultimate Crispy Savory Side Dish with golden edges, savory garlic, and cheesy goodness.
2 lbs sweet potatoes, peeled and cubed (1-inch pieces)
2 tbsp extra virgin olive oil
1 tsp kosher salt
½ tsp black pepper
3 cloves garlic, minced
½ cup parmesan cheese, freshly grated
2 tbsp fresh parsley, finely chopped
Preheat oven to 400°F (200°C) and place a baking pan inside to heat.
In a large bowl, toss sweet potato cubes with olive oil, salt, and pepper until evenly coated.
Carefully remove the hot pan, line with parchment paper, and spread potatoes in a single layer.
Roast for 20–25 minutes until edges begin to brown.
