Ingredients

Potatoes

  • 45 small/medium-sized yellow potatoes, peeled and diced
  • ¼ cup olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon paprika

Chicken and Sauce

  • pounds boneless skinless chicken breast, cut into 1-inch cubes
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 tablespoons salted butter
  • 2 tablespoons minced roasted garlic
  • 1 (12 ounce) bottle Buffalo Wild Wings Garlic Parmesan Sauce
  • 1 cup shredded mozzarella cheese

Instructions

  1. Prepare the potatoes: In a large bowl, combine the diced potatoes with olive oil, garlic powder, salt, pepper, and paprika. Stir thoroughly to ensure the potatoes are evenly coated with the seasoning.
  2. Cook the potatoes in the air fryer: Preheat your air fryer to 400°F. Transfer the seasoned potatoes to the air fryer basket and cook for 20 minutes, stirring halfway through to promote even browning and crispness.
  3. Melt the butter: While the potatoes cook, heat a 12-inch skillet over medium heat and melt the salted butter completely.
  4. Season and cook the chicken: Add the chicken cubes to the melted butter in the skillet. Sprinkle paprika, Italian seasoning, salt, and pepper over the chicken. Stir occasionally and cook until the chicken’s internal temperature reaches 165°F, ensuring it is fully cooked.
  5. Add sauce and garlic: Stir in the minced roasted garlic and the entire bottle of garlic Parmesan sauce, mixing until the chicken is fully coated in the sauce.
  6. Add potatoes and cheese: Place the cooked potatoes on top of the chicken and sauce mixture in the skillet. Sprinkle the shredded mozzarella cheese evenly over the top.
  7. Melt the cheese: Cover the skillet with a lid and turn off the heat. Allow the residual heat to gently melt the cheese for a few minutes.
  8. Serve immediately: Once the cheese has melted, serve the dish hot for a delicious, comforting meal.

Notes

  • For even cooking, cut the chicken and potatoes into uniform sizes.
  • You can substitute buffalo wild wings garlic Parmesan sauce with any garlic Parmesan sauce of your choice.
  • If you don’t have an air fryer, roasting the potatoes in an oven at 425°F for 25-30 minutes on a baking sheet is an alternative method.
  • Make sure the chicken is cooked to an internal temperature of 165°F for safety.
  • Leftovers can be refrigerated and reheated, but best enjoyed fresh.
