Ingredients

Mushrooms

  • 500g / 1lb mushrooms (button, Swiss brown / cremini or 8 large portabello mushrooms)

Seasoning and Flavoring

  • 50g / 3 tbsp unsalted butter, melted
  • 1 tbsp olive oil
  • 2 garlic cloves, finely minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 1/2 tbsp lemon juice
  • 1 tsp fresh thyme leaves (or parsley for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 220°C (450°F) or 200°C (fan-forced). This high temperature is essential for roasting the mushrooms to a juicy and slightly caramelized finish.
  2. Toss Mushrooms: In a large bowl, combine the mushrooms with melted butter, olive oil, finely minced garlic, salt, and pepper. Use a rubber spatula to gently toss until the mushrooms are evenly coated with the mixture.
  3. Roast Mushrooms: Spread the coated mushrooms evenly onto a baking tray in a single layer. Roast them in the preheated oven for 25 minutes without stirring or turning to allow them to roast evenly and develop a nice caramelized exterior.
  4. Add Lemon and Thyme: Once roasted, remove the mushrooms from the oven. Gather them to one side of the tray, drizzle with fresh lemon juice, sprinkle with thyme leaves, and gently toss to combine all flavors. Serve immediately for best taste and texture.
  5. Roasting Large Mushrooms (Portabello): For large mushrooms like portabello, place them cap side down (stems up) in a snug baking dish. Spoon 1 teaspoon of butter over each mushroom and brush the remaining butter around the edges. Drizzle olive oil, sprinkle salt and pepper, and roast for 20 minutes for slightly firm or 25 minutes for fully tender mushrooms without turning. After roasting, squeeze fresh lemon juice and sprinkle thyme, serving with pan juices for extra flavor.

Notes

  • Do not toss or turn the mushrooms during roasting to ensure proper caramelization.
  • If using large portabello mushrooms, roasting times vary slightly depending on desired tenderness.
  • Parsley can be used instead of thyme for a different but fresh herbal finish.
  • These mushrooms pair wonderfully with grilled proteins, crusty bread, or as part of a vegetable platter.
  • Use fresh lemon juice at the end to brighten the earthy mushroom flavor.
