Ingredients

Crust

  • ¾ cup Fruity Pebbles cereal
  • ½ cup graham cracker crumbs
  • 3 tablespoons unsalted butter, melted
  • ¼ teaspoon salt

Filling

  • 16 ounces cream cheese, room temperature
  • ⅔ cup granulated sugar
  • ⅓ cup sour cream, room temperature
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 2 large eggs, room temperature
  • ¾ cup Fruity Pebbles cereal (plus more for sprinkling on top if desired)

Instructions

  1. Preheat Oven and Prepare Pan: Preheat the oven to 325 degrees Fahrenheit. Line 12 muffin pan holes with paper liners and set aside for the crust preparation.
  2. Make the Crust: In a medium bowl, combine ¾ cup Fruity Pebbles cereal, graham cracker crumbs, melted butter, and ¼ teaspoon salt. Mix well until all ingredients are evenly incorporated.
  3. Form the Crusts: Evenly spoon the crust mixture into the lined muffin pan holes, pressing down firmly to create a compact base for the cheesecakes.
  4. Bake the Crusts: Bake the crusts for 5 minutes. Once baked, remove from the oven and set aside to cool while preparing the filling.
  5. Prepare the Filling: In a large bowl, beat the cream cheese and granulated sugar together on low speed using a hand or stand mixer until smooth and creamy.
  6. Add Remaining Filling Ingredients: Scrape down the sides of the bowl, then add sour cream, vanilla extract, and ¼ teaspoon salt. Beat on low speed until fully incorporated.
  7. Incorporate Eggs and Cereal: With the mixer running on low speed, add the eggs one at a time, mixing just until combined after each addition. Gently fold in ¾ cup Fruity Pebbles cereal by hand to retain texture.
  8. Fill the Crusts: Spoon the cheesecake filling over the baked crust bases, filling each muffin liner almost to the top, leaving a small gap for expansion.
  9. Bake the Cheesecakes: Bake in the preheated oven for 15-20 minutes, or until the cheesecakes are set but still slightly jiggly in the center.
  10. Cool and Refrigerate: Allow cheesecakes to cool completely at room temperature. Then, refrigerate for at least four hours to fully set before serving.
  11. Serve: Just before serving, sprinkle additional Fruity Pebbles on top of each cheesecake for an extra crunchy and colorful finish.

Notes

  • Make sure all dairy ingredients are at room temperature to ensure a smooth cheesecake filling.
  • Do not overmix the eggs into the batter to prevent a dense texture.
  • You can substitute graham cracker crumbs with digestive biscuits for a slightly different flavor.
  • For a more vibrant topping, add colorful Fruity Pebbles just before serving to maintain their crunch.
  • Store any leftovers in an airtight container in the refrigerator for up to 3 days.
