Ingredients

56 large fresh yellow peaches, sliced (about 5 cups or 750–900g)
¼ cup granulated sugar
1 tablespoon cornstarch (optional)
½ cup salted butter, melted
¾ cup granulated sugar
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
Pinch of salt
¼ cup turbinado sugar (optional)
Whipped cream or vanilla ice cream, for serving

Instructions

Preheat the oven to 350°F (175°C).
Lightly butter the bottom of a 9×13-inch baking dish.
Add the sliced peaches and ¼ cup sugar directly to the baking dish and toss to combine. If your peaches are extra juicy, stir in the cornstarch.
In a mixing bowl, combine the melted butter, ¾ cup sugar, vanilla extract, flour, baking powder, and salt. Mix until a thick, cookie dough-like batter forms.
Drop spoonfuls of the batter evenly over the peaches. Gently spread with a spoon or your fingers, leaving some gaps for the fruit to bubble through.
Bake for 30 minutes, or until the peach filling is bubbling around the edges.
Sprinkle the turbinado sugar evenly over the top.
Return to the oven and bake for an additional 10–15 minutes.
For a crisp, golden finish, place under the broiler for 2–3 minutes, watching carefully to prevent burning.
Remove from the oven and allow the cobbler to rest for 20–30 minutes before serving. This helps the peach filling thicken into a rich, saucy consistency.
Serve warm with whipped cream or a scoop of vanilla ice cream.
