Ingredients

2 slices thick-cut sourdough or white bread

1 tablespoon unsalted butter, softened

2 teaspoons everything bagel seasoning, divided

1/3 cup (about 1.25 oz) sharp cheddar cheese, shredded

1/3 cup (about 1.25 oz) low-moisture mozzarella cheese, shredded

1 tablespoon (about 0.5 oz) cream cheese, softened

Optional Add-ins:

Thinly sliced scallions

Fresh tomato slices

Cooked bacon or turkey

Instructions

Prep Ingredients:

Shred cheddar and mozzarella. Soften cream cheese.

If needed, slice bread into thick, even slices.

Season the Bread:

Spread butter evenly over one side of each slice.

Sprinkle 1 teaspoon of everything bagel seasoning on the buttered sides and press it in gently.

Assemble the Sandwich:

Place bread slices buttered-side down.

Spread cream cheese on one slice.

Top with shredded cheeses and any optional add-ins.

Place second slice on top, buttered side facing up.

Cook the Sandwich:

Preheat a skillet over medium heat for 1 minute.

Cook the sandwich 2–3 minutes per side, gently pressing with a spatula.

If cheese isn’t melting, cover skillet loosely for 1 minute.

Flip and cook until golden brown on both sides and cheese is fully melted.

Optionally, sprinkle more everything bagel seasoning after flipping.

Serve:

Remove from skillet and rest on a cutting board for 1 minute.

Slice in half and serve hot.

Notes

Add more mozzarella for extra gooey texture.

Use thick bread for the best crunch.

Press seasoning into the butter to keep it from falling off.

Gluten-free and dairy-free alternatives can be used as needed.

Covering the skillet helps melt the cheese without burning the bread.
