Ingredients

Dry Ingredients

  • 1 3/4 cups (90 g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt

Wet Ingredients

  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup smooth peanut butter
  • 1/2 cup (110 g) packed brown sugar
  • 1/4 cup (50 g) granulated sugar, plus more for rolling
  • 1 large egg
  • 2 tablespoons milk
  • 1 teaspoon pure vanilla extract

Topping

  • Hershey Kisses, for topping

Instructions

  1. Preheat and prepare baking sheets: Preheat your oven to 375°F (190°C). Line two large baking sheets with parchment paper to prevent sticking and for easy cleanup.
  2. Combine dry ingredients: In a small bowl, whisk together the flour, baking soda, and kosher salt until evenly mixed. Set aside.
  3. Cream butter and peanut butter: In a large mixing bowl, use a handheld mixer on medium-high speed to beat the softened butter and smooth peanut butter together until the mixture is smooth and creamy.
  4. Add sugars and egg: Add the brown sugar and granulated sugar to the butter mixture. Beat until the mixture is light in color and fluffy. Then, beat in the egg until fully incorporated.
  5. Mix in milk and vanilla: Add the milk and pure vanilla extract to the bowl and beat until combined.
  6. Incorporate dry ingredients: Gradually add the flour mixture to the wet ingredients and beat on low speed until just combined. Do not overmix to maintain a tender cookie texture.
  7. Form cookies: Pour some granulated sugar onto a plate. Take about 2 tablespoons of dough and roll it into a ball, then roll the dough ball in the granulated sugar to coat. Place the sugar-coated dough balls onto the prepared baking sheets, spacing them at least 2 inches apart to allow for spreading.
  8. Bake: Bake the cookies in the preheated oven for 8 to 10 minutes, or until the cookies are puffed and no longer look raw. Note that these cookies will not brown significantly.
  9. Add Hershey Kisses: Immediately after removing the cookies from the oven, press a Hershey Kiss gently into the center of each cookie. Allow the cookies to cool so the kisses set in place before serving.

Notes

  • Use room temperature butter for easier creaming with peanut butter.
  • Do not overbake; the cookies will be soft and puffy rather than browned.
  • Spacing cookies at least 2 inches apart prevents them from merging during baking.
  • You can substitute Hershey’s Kisses with chocolate chips or another chocolate candy if preferred.
  • For a richer flavor, use natural peanut butter but adjust sugar slightly as it may alter sweetness.
