Ingredients

Cake Batter

  • 15.25 ounces yellow cake mix
  • 3 large eggs (or as called for on the box)
  • 1 cup water (or as called for on the box)
  • ½ cup vegetable oil (or as called for on the box)

Crumb Topping

  • 4 ¼ cups all-purpose flour
  • 1 ½ cups melted butter, cooled to room temperature
  • 1 cup granulated sugar
  • ½ cup light brown sugar
  • 2 tablespoons ground cinnamon
  • 4 teaspoons vanilla extract

Optional Topping

  • Confectioners sugar

Instructions

  1. Preheat and prepare cake batter: Preheat your oven according to the cake mix box instructions. Prepare the cake batter by mixing the yellow cake mix, eggs, water, and vegetable oil as directed. Coat a 9×13-inch pan with non-stick cooking spray and pour in the batter. Bake for 5-7 minutes less than the time indicated on the cake mix box.
  2. Make crumb topping: While the cake is baking, combine the flour, granulated sugar, light brown sugar, melted butter, ground cinnamon, and vanilla extract in a large mixing bowl. Use a fork to mix until the mixture is crumbly in texture.
  3. Apply crumb topping: Remove the partially baked cake from the oven. Starting from the edges and moving towards the center, evenly sprinkle the crumb topping over the cake.
  4. Finish baking: Return the pan to the oven and bake for an additional 10-12 minutes, or until the cake is fully baked and the crumb topping has slightly browned.
  5. Cool and serve: Cool the cake on a wire rack for at least 30 minutes to set the crumb topping. Optionally, sift confectioners sugar over the top before slicing and serving.

Notes

  • Make sure the melted butter for the crumb topping is cooled to room temperature to ensure the topping holds its crumbly texture.
  • Adjust baking times as ovens may vary; watch for the topping to become lightly browned but not burnt.
  • For a gluten-free version, substitute the cake mix and flour with gluten-free alternatives.
  • Store leftovers covered at room temperature for up to 3 days or refrigerate for up to a week.
  • The optional confectioners sugar topping adds a nice visual touch and a slight sweetness but can be omitted if preferred.
