Ingredients

Meat and Vegetables

  • 2 pounds ground beef
  • 12 ounces frozen vegetables
  • 1/2 pound potatoes, diced
  • 1/3 cup onion, diced
  • 2 garlic cloves, minced

Liquids and Seasonings

  • 4 cups beef broth
  • 15 ounces crushed or diced tomatoes
  • 1 tablespoon dried parsley
  • 2 teaspoons salt (or more to taste)
  • 1/2 teaspoon pepper
  • 1 tablespoon oil of your choice

Instructions

  1. Brown the Ground Beef and Onions: Heat the oil in a large skillet or use the Instant Pot’s sauté function. Add ground beef and diced onions and cook for 5-7 minutes, breaking the meat apart until no pink remains. For the Instant Pot method, add garlic for the last minute of sautéing. Drain excess fat.
  2. Combine Ingredients: Transfer the browned meat and onions to the slow cooker if using that method. Add frozen vegetables, diced potatoes, beef broth, crushed or diced tomatoes, dried parsley, salt, and pepper. Stir well to combine.
  3. Slow Cooker Cooking: Cover and cook on HIGH for 3-4 hours or on LOW for 6-8 hours until vegetables are tender and flavors meld.
  4. Instant Pot Cooking: After combining all ingredients in the Instant Pot, close the lid and seal the valve. Set to cook on high pressure for 25 minutes. When cooking finishes, perform a quick release of the pressure.
  5. Serve: Once cooked, stir the soup, adjust seasoning if needed, and serve hot for a comforting meal.

Notes

  • You can substitute ground turkey or chicken for a leaner option.
  • Feel free to add other seasonal vegetables as desired.
  • Adjust salt to your taste, especially if using low-sodium broth.
  • This soup stores well and tastes great the next day.
  • Use fresh garlic instead of minced if preferred for a stronger flavor.
