Tender slow-cooked beef chuck roast served on hoagie rolls with rich au jus for a classic comforting French dip sandwich.

Ingredients

2 lbs beef chuck roast
1 tbsp olive oil
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
2 cups beef broth
1 tbsp Worcestershire sauce
1 tbsp soy sauce
4 hoagie rolls
4 slices provolone cheese (optional)
Fresh parsley for garnish (optional)

Instructions

1. Season the Beef

Pat the beef dry. Rub with olive oil, salt, pepper, garlic powder, and onion powder.

2. Sear the Roast (Optional but Recommended)

Heat a skillet over medium-high heat and sear the beef for 3–4 minutes per side until browned for extra flavor.

3. Add to Crockpot

Place beef in the Crockpot.

4. Prepare Broth

Mix beef broth, Worcestershire sauce, and soy sauce. Pour over the beef.

5. Slow Cook

Cover and cook on LOW for 8 hours until the beef is tender and easily shreddable.

6. Shred the Beef

Remove beef, let rest for 5 minutes, then shred using two forks. Return shredded meat to juices in the Crockpot.

7. Prepare Sandwiches

Toast hoagie rolls if desired. Melt provolone cheese under a broiler for 1–2 minutes for extra richness.

8. Assemble & Serve

Fill rolls with shredded beef. Serve with warm au jus from the Crockpot for dipping. Garnish with parsley if desired.

Notes

Searing the beef adds deeper flavor but can be skipped for convenience.
Letting the beef sit in its juices after shredding keeps it extra moist.
Add onions or garlic cloves to the Crockpot for more depth.
Swiss cheese can be used instead of provolone.
