Instructions

  1. Season Chicken: Season the chicken thoroughly with dried thyme, garlic powder, onion powder, salt, and pepper. Ensure the seasoning covers all sides of the chicken pieces. Place the seasoned chicken at the bottom of the slow cooker. You can also season directly inside the slow cooker if preferred.
  2. Add Onions and Broths: Layer the sliced onions on top of the chicken. Pour in the chicken and beef broth evenly over the contents. Distribute the butter pieces on top to add richness during cooking.
  3. Slow Cook: Set the slow cooker to HIGH and cook for 2 to 3 hours or on LOW for 4 to 6 hours, until the chicken is tender and fully cooked through.
  4. Sauté Onions (Instant Pot): If using an Instant Pot, switch it to sauté mode. Add butter and the sliced onions to the pot and cook for about 5 minutes until the onions soften and become fragrant. Then turn off the sauté mode.
  5. Deglaze Instant Pot: Pour both broths into the Instant Pot and use a wooden spoon to scrape and deglaze the bottom, loosening any browned bits to enhance flavor.
  6. Re-season and Add Chicken: Reapply the seasoned mix of dried thyme, garlic powder, onion powder, salt, and pepper to the chicken pieces and place them inside the Instant Pot with the onions and broth.
  7. Pressure Cook: Secure the Instant Pot lid and seal the valve. Set it to cook on high pressure for 10 minutes. Once the cooking time completes, perform a quick release of the pressure before opening the lid.
