Instructions

  1. Preheat the oven: Set your oven to 425˚F and position a rimmed sheet pan on the lowest rack as it heats. This ensures the pan is hot and ready to crisp the ingredients.
  2. Prepare the marinade: In a small bowl, whisk together olive oil, white vinegar, dried parsley, dried oregano, minced garlic, red pepper flakes, grated Parmesan, black pepper, dried basil, dried thyme, dried tarragon, and a pinch of salt. Reserve 2 tablespoons of this marinade for later.
  3. Combine the vegetables: Place frozen broccoli, frozen cauliflower, frozen Brussels sprouts, and quartered garlic cloves into a large mixing bowl.
  4. Toss vegetables in marinade: Pour all but 2 tablespoons of the marinade over the veggies and toss thoroughly to coat them evenly.
