Ingredients

Potatoes

  • 750 g / 1.5 lb baby potatoes, halved (about 3.5cm / 1.75″, 2024 potatoes)

Parmesan Mixture

  • 2 tbsp olive oil, plus more for drizzling
  • 1/2 cup / 50 g grated parmesan (the sand-like type)
  • 1/2 tsp garlic powder (or sub with onion powder)
  • 1/2 tsp dried oregano or thyme
  • 1/2 tsp paprika
  • 1/4 tsp salt (optional, use table salt)
  • 1/2 tsp black pepper

Dipping Sauce and Garnish

  • 3/4 cup sour cream, or substitute with plain yoghurt or a combination of both
  • 1/4 cup finely chopped green onions/scallions, plus more for garnish (or chives)

Instructions

  1. Preheat the Oven: Set your oven to 200°C (400°F) or 180°C (fan-forced) to prepare for roasting the potatoes.
  2. Prepare Parmesan Mixture: Combine the grated parmesan, garlic powder, dried oregano or thyme, paprika, salt, and black pepper in a bowl to create the flavorful coating.
  3. Oil the Baking Dish: Drizzle olive oil in a 22 x 33 cm (9 x 13 inch) glass baking dish, tilting it to ensure the base is evenly coated to prevent sticking and help the parmesan crust form.
  4. Sprinkle Parmesan Mixture: Evenly scatter the parmesan mixture over the oiled base of the baking dish. Do not disturb or spread it after sprinkling to allow an even crust to form.
  5. Arrange Potatoes: Place the halved potatoes cut side down firmly onto the parmesan mixture so they stick and press slightly into the cheese layer.
  6. Optional Drizzle and Season: Lightly drizzle the tops of the potatoes with a bit of olive oil or spray, and sprinkle with extra salt if desired for more flavor.
  7. Bake the Potatoes: Roast for 35 to 40 minutes until the potatoes are tender and the parmesan crust underneath has turned deep golden and crispy. You can check through the glass dish to monitor the crust.
  8. Rest and Cut: Allow the potatoes to rest for 5 minutes after baking. Then use a spatula or egg flip to cut between every 4 or so potatoes to separate them while maintaining the parmesan crust.
  9. Flip and Serve: Scoop up groups of potatoes and flip them so the crispy cheese side is facing up on your serving platter. Garnish with extra green onions and serve with the sour cream or yoghurt dipping sauce.
