Potatoes

  • 2 to 3 pounds sweet potatoes

Instructions

  1. Prepare the Potatoes: Cut the sweet potatoes into thirds (or 4-5 pieces if they are very large). You can leave the skin on or peel them according to your preference.
  2. Preheat Oven: Set the oven to 450°F (232°C) to get it ready for roasting the potatoes.
  3. Boil Potatoes: Place the cut potatoes in a large pot and cover with cold water. Bring to a boil and cook until the potatoes are just barely fork tender, about 10 to 15 minutes. Drain the potatoes and let them cool slightly.
  4. Smash and Season: Brush a baking sheet with 1 ½ tablespoons of olive oil. Arrange the boiled potatoes on the sheet. Using your hand or the bottom of a glass, gently smash each potato piece to flatten it while keeping it mostly intact. Sprinkle the ranch seasoning evenly over the smashed potatoes. Optionally, spritz or brush the tops with remaining olive oil to promote crispiness.
  5. Roast Potatoes: Place the baking sheet in the preheated oven and roast for about 25 minutes or until the potatoes turn golden brown and crispy around the edges.
