Ingredients

Vegetables and Aromatics

  • 23 medium Yukon gold potatoes, diced
  • 1/2 bell pepper (any color), seeded and diced
  • 1/2 red onion, diced
  • 23 cups baby spinach
  • 2 cloves garlic, minced

Other Ingredients

  • 2 tablespoons extra-virgin olive oil
  • Pinch of red pepper flakes
  • Kosher salt, to taste
  • Freshly-ground black pepper, to taste
  • 34 eggs

Instructions

  1. Heat the Oil and Sauté Potatoes and Vegetables: Warm the extra-virgin olive oil in a large skillet over medium-high heat. Once hot, add the diced Yukon gold potatoes, bell pepper, and red onion. Sauté for 6 to 8 minutes, stirring every minute or so, ensuring the potatoes start to brown and develop crispy edges.
  2. Add Spinach, Garlic, and Red Pepper Flakes: Stir in the baby spinach, minced garlic, and a pinch of red pepper flakes. Sauté for an additional minute, just until the garlic becomes fragrant and the spinach starts to wilt.
  3. Create Spaces and Cook Eggs: Using a spatula or wooden spoon, push the potato and spinach mixture aside to create small wells in the skillet. Crack an egg into each well. Cover the skillet with a lid and cook for 3 to 5 minutes, or until the eggs reach your preferred doneness.
  4. Season and Serve: Season the skillet with kosher salt and freshly ground black pepper to taste. Serve the crispy potato and eggs skillet immediately for a warm, hearty breakfast.

Notes

  • Use Yukon gold potatoes for the best texture and flavor; russets can also work but may be less creamy.
  • Adjust the red pepper flakes for your preferred level of spiciness or omit if you prefer a milder dish.
  • Covering the skillet helps cook the eggs evenly; use a tight-fitting lid for best results.
  • You can add other vegetables such as mushrooms or tomatoes for extra nutrition and flavor.
  • For a dairy-free, gluten-free, and naturally vegetarian meal, this recipe fits well.
