Instructions

  1. Heat Oil and Butter: In a five to six quart stockpot over medium-high heat, add the extra virgin olive oil and salted sweet cream butter to melt together, creating a flavorful base for the soup.
  2. Sauté Onion and Garlic: Add the finely diced sweet yellow onion and freshly minced garlic. Cook for five to seven minutes, stirring often, until the onion becomes translucent and fragrant.
  3. Add Flour: Whisk in the all-purpose flour and continue cooking and stirring for two minutes. This forms a roux that will help thicken the soup.
  4. Add Tomato and Broth: Pour in the tomato puree, vegetable broth, and add the tomato paste. Stir well to completely incorporate the tomato paste into the mixture.
  5. Season the Soup: Add granulated sugar, kosher salt, dried basil, cracked black pepper, red pepper flakes, and whole bay leaves. Stir occasionally as the soup heats until it just begins to simmer.
