Ingredients

Main Ingredients

  • 1/2 pound ground beef
  • 1 can (15.25 ounces) corn, drained
  • 2/3 cup condensed cream of chicken soup
  • 1/2 cup shredded cheddar cheese, divided
  • 1/2 cup whole milk
  • 2 tablespoons sour cream
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 cups frozen tater tots

Instructions

  1. Preheat Oven: Preheat your oven to 375ºF (190ºC) and grease a 9×13 inch baking dish to prepare it for the casserole.
  2. Brown Beef: Place the ground beef in a large skillet over medium-high heat. Chop it into small pieces and cook until the beef is no longer pink, about 8 minutes. Drain excess fat if necessary.
  3. Mix Ingredients: Remove the skillet from heat. Stir in the drained corn, condensed cream of chicken soup, 1/4 cup of shredded cheddar cheese, whole milk, sour cream, garlic powder, salt, and black pepper until well combined.
  4. Assemble Casserole: Spread the beef mixture evenly into the prepared 9×13 inch baking dish. Evenly distribute the frozen tater tots over the beef mixture.
  5. Add Cheese Topping: Sprinkle the remaining shredded cheddar cheese evenly over the layer of tater tots.
  6. Bake: Place the dish in the preheated oven and bake for 20 to 25 minutes until the cheese is melted and starting to turn golden brown.
  7. Serve: Remove from oven and let it cool slightly. Serve hot and enjoy your delicious Cowboy Casserole.

Notes

  • For a lighter version, use reduced-fat cheese and milk.
  • You can substitute ground turkey or chicken for ground beef for a leaner option.
  • Make sure to drain excess grease after browning the beef to avoid a greasy casserole.
  • Frozen tater tots do not need to be thawed before adding.
  • This casserole can be prepared a day ahead and baked before serving.
