Looking for an easy, no-bake keto snack? These brownie bites are packed with protein from cottage cheese and protein powder, sweetened with erythritol, and made for guilt-free snacking. Great for post-workout or low-carb cravings!
1 cup full-fat cottage cheese
2 tablespoons cocoa powder
1/4 cup almond flour
2 tablespoons powdered Erythritol (adjust to taste)
1 tablespoon vanilla extract
1/4 cup chocolate protein powder (plant-based, whey, or casein)
1 tablespoon chia seeds (optional)
Pinch of sea salt
Optional: 2 tablespoons dark chocolate chips
In a mixing bowl, add cottage cheese, almond flour, cocoa powder, protein powder, Erythritol, and vanilla extract.
Whisk or mix until well combined and smooth. (Blend cottage cheese first if you prefer a smoother texture.)
Stir in chia seeds and dark chocolate chips (if using).
Use a spoon to divide the mixture into 12 equal portions.
Roll each portion into a ball using your hands.
Place the brownie bites onto a parchment-lined tray.
Chill in the refrigerator until firm (about 15–30 minutes), or freeze for a colder bite.
