Ingredients

Pretzel Dough

  • 2 1/4 tsp instant yeast
  • 1 1/2 cups warm water
  • 1 tsp salt
  • 1 tbsp brown sugar
  • 2 tbsp unsalted butter (melted)
  • 4 cups all-purpose flour

Baking Soda Bath and Topping

  • 9 cups water
  • 1/2 cup baking soda
  • 1 large egg
  • 1 tbsp water
  • 1/4 cup butter (melted)
  • 3/4 cup sugar
  • 3 tsp cinnamon

Cream Cheese Dip

  • 4 oz cream cheese (softened)
  • 1/4 cup butter (softened)
  • 1/2 tsp vanilla extract
  • 1 1/2 cups powdered sugar

Instructions

  1. Activate Yeast: Dissolve the instant yeast in warm water in a large bowl, stirring for about one minute until mostly combined.
  2. Mix Dough Ingredients: Add salt, brown sugar, and melted butter to the yeast mixture and stir thoroughly.
  3. Add Flour: Gradually incorporate the all-purpose flour one cup at a time until the dough becomes thick and no longer sticky. Add extra flour if necessary, checking by poking the dough to ensure it bounces back.
  4. Knead Dough: Lightly flour a surface and knead the dough for three minutes until smooth. Form into a ball.
  5. First Rise: Oil a large bowl with nonstick spray, place the dough inside, cover with a towel, and let it rest in a warm area for approximately 30 minutes.
  6. Preheat Oven and Prepare Baking Soda Bath: Preheat oven to 425°F (220°C). Bring 9 cups of water and half a cup of baking soda to a boil in a large pot.
  7. Shape Pretzel Bites: Cut the dough ball into 6 equal sections. Roll each section into ropes about 20-22 inches long and slice into 10-12 pieces approximately 1.5 inches each.
  8. Bake Pretzel Bites: Submerge one rope’s worth of pretzel bites into the boiling baking soda bath for 20-30 seconds. Remove with a slotted spoon and place on a parchment-lined baking sheet.
  9. Egg Wash: Beat together the egg and 1 tablespoon water. Brush each pretzel bite with this mixture.
  10. Bake: Bake pretzel bites for 15 minutes or until golden brown on top. Remove from oven.
  11. Prepare Cinnamon Sugar Coating: In a small bowl, mix sugar and cinnamon.
  12. Coat Pretzel Bites: Dip each warm pretzel bite into melted butter, then roll in the cinnamon sugar mixture. Place back on the tray and repeat with remaining bites.
  13. Make Cream Cheese Dip: Beat together softened cream cheese and butter until smooth.
  14. Add Flavor and Sweetener: Mix in powdered sugar and vanilla extract until completely combined. If necessary, add milk in 1/2 tablespoon increments to soften. Microwave for 20 seconds before serving if not used immediately.

Notes

  • Ensure the water used for activating yeast is warm (about 110°F) but not hot to avoid killing the yeast.
  • The baking soda bath creates the distinctive pretzel crust and color; do not skip this step.
  • Use a silicone baking mat or parchment paper to prevent sticking during baking.
  • For a softer pretzel bite, do not overbake; remove once tops are golden brown.
  • Store any leftover pretzel bites in an airtight container and reheat slightly for best texture.
  • The cream cheese dip can be adjusted in consistency by adding milk as needed.
