  • 2 cups (~230 g) apple, chopped (about 1 large crisp apple)

Cinnamon Sugar Topping

  • 1/3 cup (66 g) granulated sugar
  • 1 teaspoon cinnamon
  • 4 teaspoons (20 g) brown butter or butter, melted

Whipped Brown Butter Honey Mascarpone Cream (Optional)

  • 1/4 cup (57 g) unsalted brown butter, solid
  • 6 oz mascarpone, cold or slightly softened
  • 2 oz cream cheese, softened (or additional mascarpone)
  • 1/2 tablespoon vanilla extract
  • Pinch of salt
  • 23 tablespoons honey, to taste
  • Optional: 1–2 tablespoons cold heavy cream for lighter whipped texture

Instructions

  1. Preheat and prepare pan: Preheat your oven to 180°C (350°F). Line a 10×6.5-inch or 8×8-inch baking pan with parchment paper to enable easy removal of the cake after baking.
  2. Chop apples: Roughly chop the apples into about 1/2 inch (1.25 cm) chunks, setting them aside for the batter.
  3. Make cinnamon sugar topping: In a small bowl, combine the granulated sugar, cinnamon, and melted brown butter. Stir well and set aside for topping the cake later.
  4. Mix wet ingredients: In a large mixing bowl, whisk together the eggs, oil, sour cream (or Greek yogurt), whole milk, granulated sugar, brown sugar, vanilla extract, and salt until the mixture is smooth and well blended.
  5. Add dry ingredients: Sift the cake flour, baking powder, and baking soda directly into the wet ingredients bowl. Using a spatula, gently fold in the dry ingredients with light motions to avoid overmixing.
