Ingredients

Base

  • 1 package cinnamon rolls (with frosting and refrigerated)

Cheesecake Filling

  • 16 ounces cream cheese (softened)
  • ½ cup granulated sugar
  • ½ cup sour cream
  • 1 ½ teaspoons vanilla extract
  • 2 eggs

Cinnamon Swirl

  • ½ cup unsalted butter (melted)
  • ½ cup light brown sugar
  • 2 ½ tablespoons ground cinnamon

Topping

  • Frosting from cinnamon rolls (to spread on top)

Instructions

  1. Prepare the Base: Preheat your oven to 325°F (163°C) and lightly grease a springform pan. Take the cinnamon rolls and press them flat evenly across the bottom of the pan until fully covered, creating a solid base. Set aside.
  2. Make the Cheesecake Batter: In a large bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy. Add the sour cream and vanilla extract, and continue beating until the mixture is free of lumps. Then, add the eggs one at a time, mixing completely after each addition to ensure a smooth batter.
  3. Prepare the Cinnamon Swirl: In a separate bowl, combine the melted unsalted butter, light brown sugar, and ground cinnamon. Stir until well combined and smooth.
  4. Assemble the Cheesecake: Pour and spread the cream cheese batter evenly over the cinnamon roll base in the springform pan. Then, drop spoonfuls of the cinnamon-butter mixture over the top of the batter. Using a knife, gently swirl the cinnamon mixture into the cream cheese filling to create a marbled effect.
  5. Bake the Cheesecake: Place the springform pan in the preheated oven and bake for about 30 minutes, or until the cheesecake is just set — it should be jiggly in the center but firm around the edges. Remove from the oven and let the cheesecake cool completely at room temperature.
  6. Add the Frosting and Chill: Once cooled, spread the frosting from the cinnamon rolls evenly over the top of the cheesecake. Refrigerate for at least 4 hours to allow it to set and develop its flavors fully. Slice, serve, and enjoy your decadent cinnamon roll cheesecake!

Notes

  • Ensure the cream cheese is softened to room temperature for a smooth batter without lumps.
  • Swirling the cinnamon mixture gently helps create beautiful marbling without over-mixing.
  • Cooling completely before adding frosting prevents the frosting from melting and sliding off.
  • Refrigerate for a minimum of 4 hours, but overnight chilling is ideal for the best texture and flavor.
  • Use a springform pan to make removing the cheesecake easy and clean.
