Ingredients

Cinnamon Crumb

  • 1/4 cup unsalted butter, melted
  • 1/4 cup packed brown sugar
  • 1 tablespoon ground cinnamon

Crust

  • 1½ cup graham cracker crumbs
  • 7 tablespoons unsalted butter, melted

Cream Cheese Filling

  • 24 ounces cream cheese, room temperature
  • 1 cup granulated sugar
  • 1/2 cup sour cream, room temperature
  • 1/4 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 3 large eggs, room temperature

Vanilla Icing

  • 1/2 cup powdered sugar
  • 2 tablespoons heavy whipping cream
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare Cinnamon Crumb: In a medium bowl, combine melted butter, brown sugar, and cinnamon. Mix until the butter is fully incorporated and the mixture forms clumps, but do not overmix. Set aside.
  2. Preheat and Prepare Pan: Preheat the oven to 350°F (180°C). Line an 8 or 9-inch square baking pan with parchment paper and set aside.
  3. Make Crust: In a medium bowl, mix graham cracker crumbs with melted butter until evenly coated. Press the mixture firmly into the bottom of the prepared pan to form an even crust.
  4. Bake Crust: Bake the crust for 10 minutes, then remove from the oven and allow to cool at room temperature.
  5. Prepare Cream Cheese Filling: Reduce oven temperature to 325°F (165°C). In a large bowl, beat cream cheese and granulated sugar together until smooth and well combined. Add sour cream, cinnamon, and vanilla extract, mixing until incorporated. Add eggs one at a time, beating each until fully mixed.
  6. Assemble Bars – First Layer: Pour half of the cream cheese filling evenly over the cooled crust. Sprinkle half of the prepared cinnamon crumb mixture evenly on top.
  7. Assemble Bars – Second Layer: Pour the remaining cream cheese filling over the cinnamon crumb layer, smoothing the top. Sprinkle the remaining cinnamon crumb mixture evenly over the top layer.
  8. Bake the Bars: Bake for 55-60 minutes, or until the center is slightly jiggly when gently shaken. After baking, turn off the oven and leave the bars inside for 15 minutes. Then, crack open the oven door and let the bars remain in the oven for another 15 minutes to cool gradually.
  9. Cool Bars: Remove the pan from the oven and place it on a wire rack to cool to room temperature. Once cooled, refrigerate the bars for at least 5 hours or overnight to set fully.
  10. Make Vanilla Icing: In a small bowl, whisk together powdered sugar, heavy whipping cream, and vanilla extract until smooth and pourable.
  11. Finish and Serve: Drizzle or spread the vanilla icing over the chilled bars. Cut into squares and serve chilled.
  12. Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.

Notes

  • Make sure all dairy ingredients (cream cheese, sour cream, and eggs) are at room temperature before mixing to ensure a smooth filling.
  • Do not overmix the cinnamon crumb topping; it should remain clumpy for texture.
  • Cooling the bars gradually in the oven helps prevent cracking on the surface.
  • Use parchment paper to line the pan for easy removal and cleaner edges.
  • For best flavor, refrigerate overnight before serving.
  • These bars are rich and creamy, perfect for a special dessert or coffee accompaniment.
