Ingredients

  • 1 3/4 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar (optional)
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 3/4 cup whole milk
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 2 tsp vanilla extract

For the cinnamon sugar topping:

  • 2 tbsp melted butter (for brushing)
  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment if desired.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt.
  3. In another bowl, whisk milk, eggs, melted butter, and vanilla until combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined—do not overmix.
  5. Pour the batter into the prepared pan and bake for 45–55 minutes or until a toothpick comes out clean.
  6. While still warm, brush the top of the loaf with melted butter and sprinkle with the cinnamon sugar mixture.
  7. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Swirl extra cinnamon sugar into the batter for added spice layers.
  • Add nutmeg or allspice for deeper spice notes.
  • Fold in chopped nuts for texture.
  • A powdered sugar glaze adds extra sweetness and shine.
  • Use mini loaf pans and adjust bake time to 25–30 minutes.
