Instructions

  1. Prepare the Pan: Line an 8-inch square baking pan or dish with parchment paper, ensuring an overhang on all sides for easy lifting of the cake. Optionally, secure the parchment with binder clips to keep it in place during assembly.
  2. Make the Espresso Cream: In the bowl of a stand mixer, combine cold heavy whipping cream and espresso powder. Whisk gently to dissolve most of the espresso powder. Add mascarpone cheese, granulated sugar, and vanilla extract. Using the whisk attachment, mix on low speed for 1-2 minutes until the mixture starts to thicken. Then increase to medium-high speed and whip until it becomes very thick and creamy, about 2 minutes more.
  3. Layer the Cake: Spread a thin layer of the espresso cream evenly over the bottom of the lined pan to help the graham crackers stick. Arrange a single layer of chocolate graham crackers on top. Spread one quarter of the remaining espresso cream over the crackers using an offset spatula. Repeat this layering process three additional times, finishing with a layer of cream on top so that there are four layers of graham crackers total.
  4. Chill Overnight: Cover the top of the cake with cling film and refrigerate for at least 12 hours to allow the layers to meld and the crackers to soften.
  5. Add Chocolate Shavings and Serve: When ready to serve, remove the cake from the refrigerator. Use the parchment overhang to lift the cake onto a serving platter. Take the dark chocolate bar and use a vegetable peeler to shave pieces of chocolate along the edges; scatter these chocolate shavings over the top of the cake for garnish. Slice into 8 equal portions and serve immediately.
