Ingredients

Sauce Ingredients

  • 2 tbsp Chinese sesame paste (or tahini as a substitute)
  • 2 tbsp light soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp white sugar (or honey, maple syrup)
  • 2 tsp toasted sesame oil
  • 1/8 tsp cooking salt or kosher salt (more to taste)

Chili Crisp Mixture

  • 2 heaped tbsp chili crisp (including oil and chili bits)
  • 1 tbsp ginger, finely minced
  • 1 tbsp garlic, finely minced

Fresh Aromatics and Garnishes

  • 1 green onion stem, finely sliced (or 1/4 red onion finely sliced)
  • 1/3 cup coriander/cilantro, roughly chopped

Noodles

  • 140g / 5oz instant noodles or ramen noodles (2 cakes)
  • 250g / 8oz fresh noodles (Hokkien or Lo Mein noodles)

Instructions

  1. Check Chili Crisp Spiciness: Taste your chili crisp to gauge its heat level. If it’s very spicy, start with less than 2 tablespoons and adjust later to avoid overpowering the dish.
  2. Prepare Base Sauce: In a bowl, combine toasted sesame oil, rice vinegar, light soy sauce, sugar, salt, and Chinese sesame paste until well mixed. Add the sliced green onion on top but don’t stir it in yet.
  3. Sizzle Chili Crisp Aromatics: Heat the chili crisp along with its oil in a small pan over medium heat. Add the minced ginger and garlic and stir for about 30 seconds until golden and fragrant. Pour this sizzling mixture over the green onion in your sauce bowl to enjoy the aromatic sizzle, then stir everything together.
  4. Cook and Toss Noodles: Prepare the noodles according to the packet instructions. When cooked, use tongs or chopsticks to transfer the noodles directly from the pot to the sauce bowl, carrying a little cooking water to loosen the sauce if needed. Toss the noodles thoroughly with the sauce and fold in the chopped coriander/cilantro.
  5. Adjust and Serve: Taste the noodles and add more salt or chili crisp to your liking, as brands vary in saltiness and spiciness. Mix well and serve immediately.

Notes

  • Use tahini as a substitute for Chinese sesame paste if unavailable; it will alter the flavor slightly but maintain the creaminess.
  • Adjust chili crisp quantities based on your heat tolerance since brands vary drastically in spiciness.
  • The green onion is added initially without mixing to maximize flavor release once the sizzling chili crisp is poured over it.
  • Fresh cilantro adds a refreshing balance to the spicy, rich sauce; omit if you dislike corianders.
  • This recipe works well with both instant and fresh noodles depending on your preference and availability.
