Instructions

  1. Preheat Broiler: Adjust the broiler rack to 8 inches below the heat source and preheat the broiler on high to crisp the bread perfectly.
  2. Prepare Bread: Place the bread cut-side-up on a foil-lined rimmed baking sheet. Drizzle lightly with olive oil all over, then broil for about 1 minute until the bread is well browned and crisp.
  3. Assemble Sandwich – Bottom Layer: Transfer the top bun(s) to a cutting board. Spread the bottom bun(s) with extra red sauce to add flavor and moisture.
  4. Add Chicken Cutlets: For the party-size sandwich, arrange the fully cooked chicken cutlets in a single layer on the bottom bun, making sure they cover the bread evenly. For individual subs, if necessary, cut the chicken cutlets lengthwise to fit and place about one cutlet per sandwich on the buns.
  5. Add Cheese: The chicken cutlets should already be coated with sauce and some cheese; top them with additional shredded mozzarella cheese to ensure melty cheesiness.
  6. Broil Sandwich: Return the assembled sandwich or subs to the broiler and cook for about 2 minutes until the cheese is fully melted and starts to bubble and brown slightly.
