These Chicken Club Sandwiches are loaded with seasoned chicken, creamy avocado, crisp lettuce, juicy tomatoes, and cheddar cheese for a satisfying homemade meal.
For the Chicken
1 large chicken breast, cut in half lengthwise
1 tablespoon olive oil
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon Italian seasoning
½ teaspoon paprika
½ teaspoon salt
¼ teaspoon black pepper
For the Avocado Mash
2 avocados
Juice of ½ lime
Salt and black pepper, to taste
For the Sandwiches
6 slices white bread, toasted
4 romaine or butter lettuce leaves
4 slices cheddar cheese
4 slices tomato
1 tablespoon honey mustard
1 tablespoon mayonnaise
In a small bowl, combine the garlic powder, onion powder, Italian seasoning, paprika, salt, and black pepper.
Brush the chicken breast halves with olive oil and season both sides evenly with the spice mixture.
Place the chicken in an air fryer basket, ensuring the pieces do not overlap.
Air fry at 375°F (190°C) for 9–10 minutes, or until the internal temperature reaches 165°F (74°C).
While the chicken cooks, scoop the avocado flesh into a bowl and add the lime juice, salt, and pepper. Lightly mash until creamy but still slightly chunky.
Toast the bread slices until golden brown and crisp.
To assemble, place a lettuce leaf on one slice of toasted bread.
Cut the cooked chicken pieces in half and place one piece on top of the lettuce.
Add a slice of cheddar cheese over the chicken.
Spread honey mustard on a second slice of toasted bread and place it mustard-side down over the cheese layer.
Add another lettuce leaf and another piece of chicken.
Top with tomato slices and a generous spoonful of avocado mash.
Add the remaining cheddar cheese slice.
Spread mayonnaise on the final slice of bread and place it mayonnaise-side down to complete the sandwich.
Slice diagonally and serve immediately.
Toasting the bread helps maintain structure and prevents sogginess.
Freshly cooked chicken provides the best flavor and texture.
For cleaner slicing, secure the sandwich with toothpicks before cutting.
The avocado mash is best prepared just before serving for maximum freshness.
Use a meat thermometer to ensure the chicken reaches a safe internal temperature of 165°F (74°C).
