Ingredients

Toasted Panko

  • 1/2 cup panko bread crumbs
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly cracked black pepper

Tahini Caesar Dressing

  • 1/3 cup tahini
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • 3 cloves garlic (roughly chopped)
  • 2 tablespoons water
  • kosher salt, to taste

Salad and Wrap

  • 1 bunch Tuscan kale (ribs removed and shredded)
  • 1 whole romaine heart (shredded)
  • 3 tablespoons Everything but the Bagel Seasoning
  • 2 ripe avocados (cut into large wedges)
  • 2 chicken breasts (seasoned with salt and pepper and grilled)
  • 4 tortillas

Instructions

  1. Toast the Panko: Place olive oil and butter in a small skillet over medium-high heat. Add the panko bread crumbs and toast them, stirring frequently, until they turn golden brown. Season with kosher salt and freshly cracked black pepper, then set aside to cool.
  2. Prepare the Tahini Caesar Dressing: Combine tahini, fresh lemon juice, olive oil, roughly chopped garlic cloves, water, and kosher salt in a small blender or food processor. Blend until smooth and creamy. Set aside.
  3. Mix the Salad: In a large bowl, combine shredded Tuscan kale and shredded romaine lettuce. Drizzle with a few tablespoons of the tahini Caesar dressing. Add the toasted panko, Everything but the Bagel Seasoning, and chopped grilled chicken breasts. Toss everything together until well mixed. Taste and adjust seasoning or add more dressing if needed.
  4. Assemble the Wraps: Lay out the tortillas and divide the salad mixture evenly among them. Add large wedges of ripe avocado on top. Wrap and roll each tortilla tightly. Slice the wraps on a diagonal and serve immediately.

Notes

  • You can substitute regular Caesar dressing if tahini is unavailable.
  • Grill the chicken ahead of time or use rotisserie chicken for convenience.
  • Kale should be shredded very finely to ensure it’s easy to eat in wraps.
  • To make this gluten-free, use gluten-free bread crumbs and tortillas.
