Ingredients

Muffins

  • 2 cups all-purpose flour (plus 1 tablespoon more)
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • 2 large eggs
  • ¼ cup salted butter (melted and cooled)
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ¾ cup milk
  • 21 ounces cherry pie filling (divided in half)

Streusel Topping

  • ¼ cup salted butter (cold and cut into cubes)
  • ½ cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ cup granulated sugar
  • ¼ teaspoon cinnamon
  • 1 tablespoon milk (or heavy cream)

Instructions

  1. Preheat Oven and Prepare Pan: Preheat the oven to 375°F. Line a 12-cup muffin pan with parchment paper liners or spray with non-stick cooking spray to prevent sticking.
  2. Mix Dry Ingredients: In a small bowl, sift together 2 cups of flour, salt, and baking powder. Set this mixture aside.
  3. Combine Wet Ingredients: In a large bowl, beat the eggs, melted and cooled butter, sugar, vanilla extract, and milk until well combined.
  4. Incorporate Dry Ingredients: Gently fold the dry ingredients into the wet mixture just until combined, being careful not to overmix to avoid dense muffins.
  5. Prepare Cherries: Transfer half of the cherry pie filling (about 1 cup) to a strainer and rinse the pie filling syrup off the cherries. Allow the cherries to drain completely, then toss them with the remaining tablespoon of flour to coat.
  6. Fold Cherries into Batter: Gently fold the floured cherries into the muffin batter, stirring just until distributed evenly.
  7. Fill Muffin Cups: Divide the batter evenly among the 12 muffin cups in the prepared pan.
  8. Add Topping Cherries: Drop 2 to 3 cherries with a small amount of pie filling over the top of each muffin for extra flavor and visual appeal.
  9. Make Streusel Topping: In a small bowl, use fingers or a fork to mix cold butter cubes, flour, baking powder, sugar, and cinnamon until crumbly. Stir in the tablespoon of milk or cream to bind the streusel slightly.
  10. Top Muffins: Sprinkle the streusel evenly over the tops of the muffins.
  11. Bake: Bake in the preheated oven for 22 to 25 minutes, or until a toothpick inserted in the center comes out with only a few moist crumbs.
  12. Cool: Remove the muffins from the oven and cool in the pan for 10 minutes before transferring to a wire rack to cool completely or serve warm.

Notes

  • Too many cherries or excess pie filling in the batter will make muffins take longer to bake and possibly remain wet; be sure to rinse and drain cherries thoroughly and pat dry if needed.
  • Fresh or frozen cherries can be used; if using frozen, thaw completely and drain off excess juice.
  • Do not overmix the batter to keep muffins tender and light.
  • Coating the cherries in flour before folding into the batter prevents them from sinking and bleeding color.
  • Oven temperatures can vary, so start checking muffins at 22 minutes to avoid overbaking.
  • Remove muffins from the pan after cooling 10 minutes to prevent continued cooking from residual heat.
