Ingredients

8 oz spaghetti
4 cloves garlic (minced)
1/2 cup grated Parmesan cheese (plus extra for topping)
1 cup shredded mozzarella cheese
2 tbsp unsalted butter
2 tbsp olive oil
Salt and pepper (to taste)
Fresh parsley (chopped, for garnish)

Instructions

Cook the spaghetti:
Bring salted water to a boil and cook spaghetti until al dente (8–10 minutes). Drain and reserve 1/2 cup pasta water.
Make garlic sauce:
In a skillet, heat butter and olive oil over medium heat. Add garlic and sauté for 1–2 minutes until fragrant (do not burn).
Add cheese:
Lower heat and stir in Parmesan and mozzarella until melted. Gradually add pasta water to create a smooth, creamy sauce.
Combine:
Add cooked spaghetti to the skillet and toss to coat evenly. Season with salt and pepper.
Serve:
Garnish with parsley and extra Parmesan cheese. Serve immediately.
