Ingredients

Pasta

  • 1 (16 oz.) package spaghetti

Cheese Sauce

  • 2 (10.75 oz.) cans cream of chicken soup
  • 2 (8 oz.) packages Velveeta cheese, cubed
  • 1 cup low-sodium chicken broth
  • 1 (1.5 oz.) package dry ranch mix

Chicken and Toppings

  • 3 cups cooked chicken, shredded or cubed
  • 2 cups sharp cheddar cheese, grated
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions until al dente. Drain the pasta and set it aside.
  2. Preheat the Oven and Prepare Baking Dish: Preheat your oven to 350ºF (175ºC). Lightly grease a 9×13-inch baking dish using non-stick spray to prevent sticking.
  3. Make the Cheese Sauce: In a medium saucepan over medium heat, combine the cream of chicken soup, cubed Velveeta cheese, and chicken broth. Stir frequently until the cheese is fully melted and the mixture is smooth. Whisk in the ranch dry mix along with kosher salt and freshly ground pepper to taste.
  4. Combine Pasta, Chicken, and Sauce: Place the drained pasta and shredded or cubed cooked chicken into the prepared baking dish. Pour the cheese sauce over the pasta and chicken, then toss everything gently until evenly coated.
  5. Add Cheddar Topping: Evenly sprinkle the grated sharp cheddar cheese over the top of the mixture in the baking dish to create a cheesy crust.
  6. Bake the Dish: Place the baking dish in the preheated oven and bake for 30-35 minutes. Bake until the cheese is melted, bubbly, and the casserole is heated through.

Notes

  • You can use leftover cooked chicken or rotisserie chicken for convenience.
  • For a spicier kick, add a pinch of cayenne pepper or chopped jalapeños to the cheese sauce.
  • Substitute Velveeta with processed cheese alternatives or cream cheese for a different texture.
  • Make sure the chicken broth is low-sodium to control saltiness, as the soup and ranch mix are already seasoned.
  • This dish can be prepared a day ahead and baked fresh before serving.
