Cheesy chicken broccoli pasta bake loaded with tender chicken, creamy homemade cheese sauce, broccoli, and golden baked cheddar topping.
Chicken
400g chicken breast, diced
1 teaspoon chicken seasoning
1 teaspoon onion granules
1 teaspoon smoked paprika
1 teaspoon salt
1 teaspoon dried rosemary
Cheese Sauce
100g butter
75g all-purpose flour
900ml to 1000ml milk
175g cheddar cheese, grated
175g gouda cheese, grated
125g mozzarella cheese
1 tablespoon onion powder
1 tablespoon paprika
1 tablespoon parsley
2 garlic cloves, finely chopped
Additional Ingredients
200g broccoli, roughly chopped
100g cheddar cheese, for topping
300g rigatoni pasta
Step 1: Cook the Chicken
Dice chicken into bite-sized pieces.
Season with chicken seasoning, onion granules, smoked paprika, salt, and rosemary.
Heat a little oil in a skillet over medium heat.
Cook chicken for 8 to 10 minutes until golden brown and fully cooked. Set aside.
Step 2: Cook the Pasta and Broccoli
Bring a large pot of salted water to a boil.
Cook rigatoni according to package instructions.
During the last 2 minutes of cooking, add broccoli florets.
Drain and set aside.
Step 3: Make the Cheese Sauce
Melt butter in a saucepan over medium heat.
Add garlic and cook for 1 minute until fragrant.
Stir in flour and cook for 1 to 2 minutes while stirring continuously.
Gradually whisk in milk until smooth.
Simmer for 3 to 5 minutes until thickened.
Stir in onion powder, paprika, and parsley.
Add cheddar, gouda, and mozzarella cheese. Stir until smooth and creamy.
Step 4: Assemble and Bake
Preheat oven to 180°C fan / 200°C conventional.
In a large bowl, combine cooked pasta, broccoli, chicken, and cheese sauce. Mix well.
Transfer mixture to a greased baking dish.
Sprinkle remaining cheddar cheese over the top.
Bake for 25 minutes until golden, bubbling, and lightly crisp on top.
Let cool for 5 minutes before serving.
Use freshly grated cheese for the smoothest sauce.
Add chili flakes for a spicy kick.
Swap broccoli for spinach or peas if desired.
Leftovers can be refrigerated for up to 3 days.
