Ingredients

Dough

  • 1 cup buttermilk (shaken, cold)
  • ½ cup butter
  • 2 cups all purpose flour
  • 1 tbsp sugar
  • 1 tbsp baking powder (aluminum free)
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp cayenne
  • 1.5 cups (about 4 oz) sharp cheddar cheese (shredded)

Topping

  • 2 tbsp butter (melted)
  • 1 tbsp hot honey (or regular honey, plus extra for drizzling)
  • 1 tsp dried parsley
  • ¼ tsp garlic powder
  • ⅛ tsp cayenne (or more if desired)
  • ⅛ tsp red pepper flakes (or more if desired)

Instructions

  1. Preheat Oven and Prepare Pan: Preheat the oven to 450°F and line a sheet pan with parchment paper. Set aside to ensure your baking surface is ready.
  2. Prepare Buttermilk and Melt Butter: Measure 1 cup of buttermilk into a liquid measuring cup and place it in the freezer to chill extra cold. Melt ½ cup butter in the microwave and set aside to cool.
  3. Combine Dry Ingredients: In a large bowl, whisk together 2 cups flour, 1 tbsp sugar, 1 tbsp baking powder, 1 tsp garlic powder, ½ tsp salt, and ¼ tsp cayenne until evenly mixed.
  4. Create Wet Mixture: Remove the chilled buttermilk from the freezer. Pour the cooled melted butter into the buttermilk and whisk or fork together until clumpy.
  5. Mix Dough: Pour the wet mixture into the dry ingredients. Using a rubber spatula, gently stir until just combined with a few white streaks remaining to avoid tough biscuits.
  6. Add Cheese: Fold in the shredded sharp cheddar gently, ensuring cheese is evenly distributed without overmixing the dough.
  7. Knead Dough: Turn dough out onto a generously floured surface. Knead 3-4 times gently, adding flour as needed to keep it manageable. The dough should feel soft, moist, but not overly sticky.
  8. Shape Dough: Roll or pat the dough into a 1-inch tall rectangle. Use a 2-2.5 inch biscuit cutter to cut out 8-10 biscuits by pressing straight down and lifting straight up. Reroll scraps and repeat.
  9. Bake Biscuits: Place biscuits evenly spaced on the prepared baking sheet. Bake for 10-14 minutes until risen, golden brown on edges, and fully cooked through.
  10. Prepare and Apply Topping: While baking, whisk melted butter, hot honey, dried parsley, garlic powder, cayenne, and red pepper flakes together. When biscuits are out of the oven, brush them generously with the hot honey topping. Serve immediately warm.

Notes

  • Use aluminum-free baking powder for best rise and flavor.
  • Keeping buttermilk extra cold helps achieve a tender biscuit texture.
  • Avoid overmixing the dough to prevent tough biscuits; a few streaks of flour remaining are okay.
  • Cut biscuits by pressing straight down without twisting to keep edges flaky.
  • Adjust cayenne and red pepper flakes in the topping for desired heat level.
  • Serve biscuits warm for best flavor and texture.
  • Can be stored in an airtight container and reheated; drizzle additional hot honey before serving.
