Authentic Cevapi from Bosnia and Herzegovina featuring juicy grilled minced meat sausages served with flatbread and traditional toppings. A beloved Balkan comfort food full of flavor.
For the Ćevapi
1 lb (450 g) ground beef
1 lb (450 g) ground lamb or additional ground beef
3 cloves garlic, minced
1 tsp salt
1 tsp baking soda
2 tbsp cold water
½ tsp black pepper
For Serving
Bosnian flatbread (lepinja) or pita bread
1 large onion, finely chopped
Kajmak (Balkan dairy spread) or sour cream
Ajvar (roasted red pepper spread), optional
Prepare the Meat Mixture
In a large bowl, combine ground beef, lamb, garlic, salt, black pepper, baking soda, and cold water.
Mix thoroughly for several minutes until the mixture becomes sticky and well combined.
Cover and refrigerate for at least 4 hours, preferably overnight.
Shape the Ćevapi
With lightly wet hands, form the meat mixture into small sausage shapes about 3–4 inches (8–10 cm) long and ¾ inch (2 cm) thick.
Place on a tray and refrigerate for 20–30 minutes before grilling.
Grill
Preheat a grill or grill pan to medium-high heat.
Grill the ćevapi for 8–10 minutes, turning occasionally, until browned and cooked through.
Warm the lepinja or pita bread on the grill for 1–2 minutes.
Serve
Place the grilled ćevapi inside warm flatbread.
Top with chopped onions.
Serve with kajmak and ajvar on the side.
Enjoy immediately while hot.
Traditional Bosnian ćevapi are often made with a mixture of beef and lamb, though all-beef versions are common.
Chilling the meat mixture overnight helps develop authentic texture and flavor.
Do not overwork the meat when shaping to keep the sausages tender.
