Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 cup caramel candies, chopped (or caramel baking bits)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in egg and vanilla extract until well combined.
  5. Gradually add dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in chocolate chips and caramel pieces.
  7. Scoop dough into balls and place on prepared baking sheets, spacing them 2 inches apart.
  8. Bake for 10–12 minutes, or until edges are golden and centers are soft.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • Use dark or white chocolate chips for variation.
  • Sprinkle flaky sea salt on top after baking for a salty-sweet finish.
  • Chill dough for 30 minutes for thicker, chewier cookies.
  • Reheat cookies in the microwave for 10 seconds to soften caramel.
  • Freeze unbaked dough balls for up to 2 months—bake from frozen with a couple extra minutes.
