  • 2 tbsp concentrated apple juice
  • 1 tsp vanilla extract
  • 2 cup all-purpose flour
  • 3/4 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/4 tsp ginger
  • 1/8 tsp allspice
  • 3/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt

Streusel Topping

  • 1/4 cup flour
  • 1 tbsp Imperial Sugar granulated sugar
  • 1/4 tsp cinnamon
  • 1/4 tsp salt
  • 1 1/2 tbsp butter (cold, cubed)

Cream Cheese Frosting

  • 5 oz cream cheese (softened)
  • 4 tbsp butter (softened)
  • 3 tbsp caramel sauce (homemade or store-bought)
  • 1 tsp vanilla extract
  • 3/4 cup Imperial Sugar powdered sugar

Toppings

  • 1 green apple (sliced into cubes)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prepare for baking the cookies.
  2. Make the Streusel: Melt butter in a medium skillet over medium heat. Remove from heat and stir in flour, granulated sugar, cinnamon, and salt until the mixture is moistened and clumps form. Return to heat and stir frequently until the streusel turns golden brown. Transfer it to a plate and let it cool completely.
  3. Make the Cookie Dough: In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy. Add the egg, concentrated apple juice, and vanilla extract and mix well. Gradually add the flour, cinnamon, ginger, nutmeg, allspice, salt, baking soda, and baking powder, mixing until just combined and no dry flour remains.
  4. Scoop and Bake Cookies: Using a large cookie scoop (¼ cup or 4 tablespoons), scoop out nine equal cookie dough balls and place them on the prepared baking sheet. Bake in the preheated oven for approximately 12 minutes until edges are set and lightly golden. Remove and allow the cookies to cool completely on a wire rack.
  5. Prepare Cream Cheese Frosting: In a bowl, beat together softened cream cheese and butter until smooth and creamy. Add powdered sugar, caramel sauce, and vanilla extract, then whip until the frosting is light, fluffy, and well combined.
  6. Assemble the Cookies: Once the cookies have cooled, spread a generous amount of cream cheese frosting on each cookie. Top with cubed green apples, sprinkle with the cooled homemade streusel, and drizzle additional caramel sauce if desired. Serve and enjoy your caramel apple cookies!

Notes

  • The concentrated apple juice enhances the apple flavor in the cookie dough but can be substituted with apple cider reduction if unavailable.
  • Ensure the cream cheese and butter for the frosting are fully softened to achieve a smooth and fluffy texture.
  • The streusel topping adds a wonderful crunch and caramelized flavor, don’t skip browning it on the skillet.
  • Use tart green apples like Granny Smith for the best contrast with the sweet frosting and caramel.
  • Store cookies in an airtight container in the refrigerator for up to 3 days to keep frosting fresh.
