  • 1½ cups mushrooms, sliced

  • 34 tbsp spring onions, diced
  • 12 green or red chilies, chopped
  • 1 cup cooked rice
  • 1 tbsp dark soy sauce
  • ½ tbsp light soy sauce
  • 1 tsp sesame oil
  • Chilli oil (optional)
  • 1 egg (optional)

Instructions

  1. Cook Mushrooms: Melt some butter in a pan over medium heat and add the sliced mushrooms. Cook until the mushrooms release most of their water and start turning golden brown.
  2. Add Garlic and Butter: Once mushrooms are almost fully cooked, stir in the sliced garlic along with an additional ½ to 1 tablespoon of butter. Continue cooking to let the garlic soften and become fragrant.
  3. Incorporate Spring Onions and Chilies: Add diced spring onions and chopped chilies to the pan. Optionally, season with chili flakes for extra heat. Stir everything together to combine.
  4. Add Rice and Sauces: Toss in the cooked rice along with dark soy sauce, light soy sauce, and sesame oil. Mix thoroughly ensuring the rice is evenly coated with the sauces and flavors.
  5. Serve: Serve the butter garlic mushroom fried rice hot. Optionally drizzle with chili oil or your favorite hot sauce. For a complete meal, top with a fried egg and enjoy immediately.
