Ingredients

Brioche

  • 1 (1lb/450g) brioche loaf

Custard Mixture

  • 4 large eggs
  • 4 1/2 cups (1080g) milk
  • 1/2 cup (100g) sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon fine sea salt

For Greasing

  • 1 tablespoon butter (for greasing the baking dish)

Instructions

  1. Preheat the Oven: Set your oven to 350°F (180°C) to ensure it is fully heated by the time your bread pudding is ready to bake.
  2. Prepare the Baking Dish: Generously grease a 9×13-inch (23x33cm) oval baking dish with butter to prevent sticking and add flavor to the crust.
  3. Cube the Brioche: Cut the brioche loaf into roughly 1-inch (3cm) cubes. Place these cubes evenly in the prepared baking dish as the base of your bread pudding.
  4. Whisk the Custard: In a large bowl, vigorously whisk together the eggs, milk, sugar, cinnamon, vanilla extract, and sea salt until the mixture is smooth and well combined. An electric mixer can be used for convenience.
  5. Combine Brioche and Custard: Pour the custard mixture evenly over the brioche cubes. Gently toss and press the cubes to ensure they absorb the custard well. The custard should almost cover the brioche, leaving some tips exposed to crisp during baking.
  6. Bake the Pudding: Place the baking dish in the preheated oven and bake for about 40 minutes until the top is golden brown and crispy, and the custard is fully set. To check doneness, the center should not jiggle and reach an internal temperature of 160°F (71°C).
  7. Serve and Enjoy: Once baked, allow the bread pudding to cool slightly before serving. Enjoy warm for the best taste and texture.

Notes

  • For extra flavor, consider adding raisins or chopped nuts to the brioche cubes before pouring the custard.
  • You can substitute whole milk with half-and-half or cream for a richer custard.
  • Ensure the custard fully soaks into the bread for at least 10 minutes before baking if time allows, to deepen flavor and texture.
  • Serve with a drizzle of caramel sauce or a dusting of powdered sugar for added indulgence.
  • Leftovers can be refrigerated and gently reheated in the oven or microwave.
