  • Crispy Topping:

  • 10 g unsalted butter, softened (2 teaspoons)
  • 10 g sugar (2 1/4 teaspoons)

Instructions

  1. Preheat the oven: Set oven to 175°C (350°F) and line a muffin tin with paper liners.
  2. Prepare the wet mixture: In a mixing bowl, whisk milk and eggs until smooth. Add half of the oil or butter, mix, then add the remaining oil and stir again. Whisk in sugar until fully combined.
  3. Add dry ingredients: Sift cake flour, milk powder, and baking powder into the wet mixture. Gently fold until smooth and lump-free, avoiding overmixing.
  4. Make the crumb topping: In a small bowl, combine cake flour, sugar, and softened butter. Rub together with fingers or a fork until crumbly.
