Ingredients

Onion and Coating

  • 2 large onions (sweet, yellow, or white)
  • 2 ½ cups all purpose flour
  • 1 teaspoon cayenne pepper
  • 2 Tablespoons paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon cumin
  • ½ teaspoon black pepper
  • 1 teaspoon kosher salt

Egg Wash

  • 2 eggs
  • 1 cup whole milk

For Frying

  • Canola oil (enough to fully submerge the onions)

For Serving

  • Blooming Onion Sauce

Instructions

  1. Prepare the Onions: Peel the onions and remove the outer skin. Slice off the top of each onion and place them cut side down on a cutting board. Starting about ½ inch from the root, make four evenly spaced cuts down through the onion. Then slice between each section to create 8 evenly spaced cuts. Flip the onions over and gently separate the layers to form the “petals.”
  2. Make the Flour Mixture: In a large bowl, whisk together the all purpose flour, cayenne pepper, paprika, dried oregano, ground cumin, black pepper, and kosher salt until evenly combined.
  3. Prepare the Egg Wash: In a separate bowl, beat the eggs and stir in the milk until smooth to create the egg wash.
  4. Coat the Onions: Dredge each onion in the flour mixture, making sure to coat between the petals. Dip the onion into the egg wash, ensuring all the petals are covered. Return the onion to the flour mixture for a second coating, pressing gently to adhere the flour. Repeat with the second onion.
  5. Deep Frying: Heat the canola oil in a deep fryer or large pot to 375°F (190°C). Carefully lower one onion into the hot oil, root side down, using a slotted spoon. Fry for about 10 minutes, or until the onion is golden brown and crispy. Repeat with the second onion. Remove from oil and place on a plate lined with paper towels to drain excess oil. Let cool for a few minutes before serving.
  6. Air Frying (Alternative Method): Follow steps 1-4. Spray onion generously with cooking spray. Line your air fryer basket with foil for easy removal. Place onion into the air fryer and cook at 350°F for 20 minutes, or until brown and crispy.
  7. Serve: Serve the blooming onions warm with blooming onion sauce for dipping.

Notes

  • You can use sweet, yellow, or white onions depending on your preference for flavor.
  • Be gentle when separating the onion petals to avoid breaking them.
  • Ensure the oil temperature stays around 375°F to get a crispy crust without absorbing too much oil.
  • Use a slotted spoon or basket to safely lower and lift onions from hot oil.
  • For a lighter version, try the air fryer method but note the texture will be slightly different than deep fried.
  • Make sure to drain the fried onions well on paper towels to remove excess oil.
