Ingredients

  • 12 oz elbow macaroni or pasta of choice
  • 2 cups cooked shredded or chopped chicken (rotisserie or grilled)
  • 1 cup BBQ sauce (your favorite variety)
  • 4 tbsp butter
  • 1/4 cup all-purpose flour
  • 3 cups milk
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella or Monterey Jack cheese
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Optional: 1/2 tsp smoked paprika
  • Optional: 1/2 tsp garlic powder
  • Optional: chopped green onions or crispy bacon bits for topping

Instructions

  1. Preheat oven to 375°F (190°C) if baking.
  2. Cook pasta in salted water until al dente, drain, and set aside.
  3. In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1–2 minutes to form a roux.
  4. Gradually whisk in milk, stirring until smooth and slightly thickened.
  5. Add shredded cheeses, salt, pepper, and optional seasonings. Stir until fully melted and creamy.
  6. Combine cooked pasta with cheese sauce, mixing gently to coat.
  7. Mix cooked chicken with BBQ sauce in a separate bowl, then fold into the mac and cheese.
  8. Transfer to a greased baking dish, top with additional cheese if desired.
  9. Bake for 15–20 minutes until bubbly and golden, or serve directly for stovetop version.
